Hoisin Mushroom Burger

Feel like a burger but not the meat? Oyster mushrooms have a delicious meaty texture and are rich in nutrients.


  • 2 tbsp butter
  • 1 brown onion
  • 200g oyster mushrooms
  • 1 tsp Chinese five spice
  • 80g hoisin sauce
  • 4 brioche buns
  • 50g cos lettuce, chopped
  • 100g coleslaw mix


  • On a medium-high heat, melt butter in a medium/large frying pan. Add in onion and brown for 2-3 mins, turning continuously. Add in mushrooms and cook until browned.
  • Sprinkle Chinese five spice over mushrooms and onions and toss well for a further 2-3 mins.
  • Add hoisin sauce and lower to a low heat for 5-10 mins, stirring occasionally.
  • Top burger buns with chopped lettuce, coleslaw, mushrooms and hoisin sauce.
  • Tip: Try a mix of mushrooms like enoki, lion’s mane or shiitake for different flavours and textures.
